Puttu Varav / Beef Puttu Recipe

Puttu is a traditional food of kerala. We prepare it with different cereal powders to get different flavors. Also we prepare it with some masala combinations which gives puttu a spicy and variety taste. Here comes the recipe of puttu varav where we combines puttu with beef curry and cooks for few minutes. It is spicy, delicious and have a crispiness of onion. 

  1. Puttu powder: 2 cup
  2. Beef: 1/2 kg
  3. Onion: 2
  4. Tomato: 1
  5. Ginger-garlic-greenchilly paste: 1tbs
  6. Crushed chilly powder(roasted and just crushed to get flakes): 2 tbs
  7. Corriander powder: 2tbs
  8. Turmeric powder: 1/2tsp
  9. Pepper powder: 1/2tsp
  10. Garam masala powder: 1/2tsp
  11. Salt: to taste
  12. Curry leaves: little
  13. Corriander leaves: little
  14. Oil: for sauting

  • Wet the puttu powder and prepare puttu as we are doing usually.
  • Keep it aside.
  • Heat a pressure cooker, add little oil and saute onion till it become transparent.
  • Then add ginger-garlic-greenchilly paste and saute until its raw smell goes off. Add curry leaves also.
  • Add tomatoes to this and cook till it mashes.
  • Next add beef pieces, turmeric powder, pepper powder, garam masala, salt , give a mix and cook for sometime.
  • Then add 1 tbs corriander powder and little water , mix well .
  • Close the lid of cooker.
  • When the first whistle comes, note the time and cook for another 20 minutes in low flame.
  • Turn off the flame, wait for pressure escape to open the cooker.
  • Meanwhile, roast red chillies and crush it using a mixer jar. It should be in crushed form not in powder form to get better taste for beef curry.
  • When the pressure goes off , open the cooker lid, add chilly powder, remaining corriander powder and corriander leaves.
  • Mix well and cook until the gravy thickens. You can adjust the gravy thickness according to your taste for beef curry.
  • But for puttu varav we need thick gravy.
  • Crush the prepared puttu with your hands and mix with the beef gravy.
  • Cook it for 10- 15 minutes by stirring in interwals.
  • Serve hot by garnishing with chopped onion and corriander leaves.
  • Chopped onions gives a crispiness too.
