Mixture Recipe


Mixture is one the popular and lovable snack of India. They are prepared in different methods and flavors. They may be either sweet or spicy. We all love to eat such things during our free time, while studying, watching television,etc. Our kids too loves it. Mostly mixtures are prepared using besan flour.
INGREDIENTS FOR PREPARATION
  1. Besan flour: 5 cups
  2. Rice powder: 2 tbs
  3. Baking soda: a pinch
  4. Dalda: 1/4 cup
  5. Cumin seeds: 1/2 tsp
  6. Peanut: 1/4 cup
  7. Cashew: 100 g (optional)
  8. Raisins: 3 tsp
  9. Asafoetida: 1/2 tsp
  10. Chilly powder: 3-4 tsp
  11. Puffed rice: 1/2 cup(optional)
  12. Salt: to taste
  13. Oil: as needed
  14. Curry leaves: 2-3 strings
  15. Garlic: 5-6 cloves
METHOD OF PREPARATION

  • Take 2 cups of besan, add 1 tsp chilly powder, 1/2 tsp turmeric powder, 2 tbs oil and little salt.
  • Mix well and prepare dough by adding water.
  • Take a sevnari or  idiyappam press, place disc having small holes in it.
  • Fill it with the prepared dough and prepare sev directly to boiling oil and cook it.
  • Repeat the steps for whole dough.
  • Take another 2 cups of besan and mix with baking soda,1/2 of dalda, and salt and mix water to get flowing thick batter.
  • Here we are using laddle with many holes for cooking.
  • Hold the laddle with holes above the boiling oil and pour the batter over it.
  • It gives small balls present in mixture.
  • Cook and take off from the oil and drain it in tissues.
  • Repeat the steps for whole batter.
  • Take the remaining 1 cup of besan, mix rice powder, remaining dalda, cumin and salt.
  • Prepare dough by adding water.
  • Replace the disc of idiyappam press with bigger holes disc , fill this dough and cook it in oil as we have done first.
  • Cashew, raisins, peanut, puffed rice are roasted in oil separately one by one.
  • Also roast curry leaves and crushed garlic in oil for seasoning.
MIXING

          Give a slight crush to prepared sev using hands to reduce its size. Mix everything prepared in a large bowl and add asafoetida and chilly powder( you can add as your taste in spice) and add roasted curry leaves and garlic for a better flavor. Mix well and store in a air-tight container.
