Jackfruit Seed Pudding

Jackfruit is  healthy and nutritious fruit whose both flesh and seeds are consumed and are rich in nutrients too. We had experienced lots of recipes with both flesh and seeds. Have you ever tried a Pudding with jackfruit or its seeds? Here comes a simple but healthiest and yummiest Pudding ever with jackfruit seeds. Let's have a try.

  1. Jackfruit seeds:20-25
  2. Milk: 500ml
  3. China grass: 10 g
  4. Condensed milk: 1/2 tin
  5. Cardamom: 1
  6. Sugar: 2 TBS + as needed (optional)
  7.  Roasted nuts or almond pieces: 2 TBS( finely chopped)
  • Cook jackfruit seeds in cooker for 2 whistles. Remove its shell and skin( just remove the skin we can easily takeout, remaining keep as itself)
  • Grind it to smooth paste along with cardamom by adding little milk.
  • Soak china grass in little water
  • Boil remaining milk with condensed milk . Add more sugar or condensed milk if needed.
  • Meanwhile melt soaked china grass..
  • When the milk starts boiling , add in melted china grass, boil till it combines with milk by stirring.
  • Allow it to cool and blend along with ground paste.
  • Meanwhile Caramelize 2 TBS sugar, pour onto a Pudding tray and keep aside 2-3 minutes.
  • Pour the Pudding mix over caramel and add chopped nuts or almonds eventually.
  • Refrigerate for 4-5 hours or till it sets completely.
  • Remould the Pudding and serve.
Yummy and healthy Jackfruit Seed Pudding is ready. Serve chilled.
